Recipe of the Day: Beijos de Coco com Chocolate (Chocolate Coconut Kisses)
Our delicious recipe of the day is for a delicious and sweet Brazilian chocolate treat, Beijos de Coco com Chocolate. This awesome dessert is a wonderful combination of Brazilian flavor and texture coming from the wonderful coconut, along with the delightful flavor of semisweet chocolate and seedless raisins. These treats are absolutely scrumptious and actually quite easy to make, without any of the fuss of complicated dessert recipes. It is perfectly served with some coffee in the morning, as a treat after lunch, or with some tea at night. For those of you with a chocolate sweet tooth like me, these are perfect anytime.
*Makes about 24 Kisses*
2 cups grated fresh coconut (about 1 coconut)
1/2 cup sugar
1/3 cup seedless raisins
1 cup semisweet chocolate chips, melted
1) In a medium heavy-bottomed saucepan, combine the coconut, sugar, and raisins and cook over medium-low heat, stirring until the sugar is melted. Remove from the heat and cool.
2) When the mixture is cool enough to handle, form it into balls about the size of a whole walnut and place them on a lightly oiled cookie sheet.
3) Place the chocolate in the top part of a double boiler and melt the chocolate over medium heat.
4) Using a teaspoon, cover the coconut balls with the melted chocolate.
5) Cool and serve, enjoy!
